What do people who suffer from environmental or food allergies need to know?

Uruguayans aren't very careful about food allergies; they'll promise you a dish has no dairy but serve it with sprinkled cheese on top. I'd be wary of going out to eat and trusting a restaurant to give you honest answers about what's in the food. They're not dishonest, just careless. I am told that people with allergies tend to see their allergies worsen here. If you have food allergies, just be sure you know and trust any restaurant you go to as waitstaff aren't always clear as to what they are serving. My friend once asked for a vegetarian option in a restaurant and was told the pasta was vegetarian, but it turned out to be ravioli filled with meat. - Aug 2016
